Classification: IGT Toscana Rosso
Varieties: Cabernet Sauvignon, Merlot and Syrah.
Climate and soil: The area is characterized by its vicinity to the sea and for the great amount of light that enables perfect ripening of the grapes.
Vinification: The grapes harvested by hand undergo a particular technique known as
Delestage. Aged subsequently for 18 months in French Oak Barriques. Then
a further 6 months of bottle-ageing before being released for sale.
Ageing: After vinification in steel vats at controlled temperature, the wines undergo a malolactic fermentation. After which the wine is matured in French Barriques for a period of between 12 and 18 months. Subsequently a light clarification the wines is carried our and they are then bottled.
Colour: Intense, of great depth, tending towards garnet red.
Bouquet: Very clear notes of spice and vanilla, together with a bouquet of small red fruits.
Palate: Powerfully concentrated with elegant and enticing tannins.
Pairing: Traditional second course dishes of Tuscan cuisine and ripe cheeses.
