Climate and soil:

In a hilly position, a short distance from the sea, the soil is clayey, rich in skeleton with a good supply of limestone. Exposure of the vineyards south and east.

Vinification:

Grapes harvested by hand in the early hours of the day are destemmed and subjected to cold maceration, at 10°C, for 24 hours. Then the must is separated from the skins through a soft press and left to spontaneously clarify for a few hours, before being sent to the fermentation, which takes place at increasing temperatures from 14 to 18°C. Once fermentation has started, the wine is transferred to terracotta amphorae where it brings the process to a conclusion.

Aging:

The resulting wine matures on its fermentation yeasts until spring, to be subsequently bottled after a light filtration.

Color:

Brilliant straw yellow with golden highlights.

Bouquet:

Characteristic bouquet of floral notes, citrus, Mediterranean herbs and minerals.

Palate:

Fresh, dry, soft wine with good structure, long persistence with excellent taste-olfactory correspondence.

Food pairings:

First courses with light sauces, fish and white meats.
